Ahead of tonight’s Great British Bake Off, Lief Gloss has some lovely recipes for you from Genesis Crafty , a modern bakery and family business owned and run by six brothers who together make baking amazing. They have devised three delicious recipes that not only look impressive but taste delicious and are simple to make, ideal for really easy to prepare, yet visually stunning. Ideal for Summer’s dinner parties, GBBO marathons and afternoon teas or a Breakthrough Breast Cancer Breakthrough Bake Off on the 17th of October.


Genesis Crafty Pancake Tower
Ingredients:
• 400ml whipping cream
4 tablespoons of lemon curd
 • Handful, fresh raspberries and fresh blueberries, or any seasonal fruits you desire! Redcurrants also make a beautiful display
• Handful, edible petals (optional), you can find stunning varieties online from Sous Chef (www.souschef.co.uk)
• 2 packets Genesis Crafty Big Original Pancakes
Method
1. Whip up your whipping cream until smooth and creamy
2. Marble 4 spoonfuls of lemon curd through your cream
3. The pancakes, fresh fruit and flowers do the rest, simply layer your Genesis Crafty pancakes (12 gives a nice height) with a dollop of lemony goodness and your seasonal fruits and top with edible flowers for a showstopper dessert or afternoon tea treat! It’s a wonderful “cheat” recipe when you want to wow friends but have no time to bake!

Genesis Crafty Ice Cream Sconewich

First came the cronut, then the duffin, what now? It’s all about the Sconewich…!
Ingredients:
500g fresh apricots, chopped
 • 250g caster sugar
• 1 tablespoon, dried lavender, extra to sprinkle (you will also need a muslin bag or tea infuser)
• 1 tub of vanilla ice cream
• Handful, edible petals (optional), you can find stunning varieties online from Sous Chef (www.souschef.co.uk)
• 1 packet Genesis Crafty Sultana Scones

Method
1. Warm the sugar for a couple minutes over a medium heat
2. Add your chopped apricots and lavender (in a muslin bag or tea strainer) to infuse, simmer softly for 30 minutes then discard your lavender and leave the jam to cool
3. Halve your scones and add a good scoop of vanilla ice cream and a drizzle of apricot jam
4. Sprinkle with dried lavender and/or edible flowers!

Genesis Crafty
Scones with Maple Syrup Icing

Ingredients
100g icing sugar
1 tablespoon unsalted butter
3 tablespoons maple syrup
Handful, chopped walnuts, hazelnuts and pecan nuts
1 packet of Genesis Crafty Sultana Scones

Method
1. Mix your icing sugar with a spoonful of butter and 3 spoonfuls of maple syrup
2. Coat your scones with the icing and sprinkle with a mixture of chopped walnuts, hazelnuts and pecan nuts – add a big mug of coffee for an American twist on the traditional British afternoon tea!
